Rotel Cream Cheese Sausage Balls

Ingredients:

1 lb hot sausage, uncooked

1 (8-oz) package cream cheese, softened

1 (10-oz) can Rotel diced tomatoes and green chilies, drained

1½ cups Bisquick

2 cups shredded Mexican cheese blend

Instructions:

Preheat oven to 400ºF. Place all ingredients in the bowl of an electric stand mixer fitted with the dough hook attachment. Mix until well combined. Scoop sausage mixture into 1-inch balls and place on a parchment paper-lined rimmed baking sheet. Bake for 18 – 20 minutes, or until brown. Sausage balls may be frozen uncooked. If baking frozen, add a few minutes to the baking time.

Italian Appetizer Bites 

2 packages ( 8 ounces each ) refrigerated crescent rolls
½ pound sliced deli salami
½ pound sliced provolone cheese
½ pound sliced boiled deli ham
7 eggs
1 cup grated parmesan cheese
2 jars (12 ounces each) roasted red peppers, drained

Heat oven to 350o.  Coat a 13x9x2 inch glass baking dish with nonstick cooking spray.  Unroll 1 package of crescent rolls and use dough to line the bottom of prepared baking dish.  Pinch seams together.

Cover dough with half of salami, provolone and ham. Lightly beat together 6 of the eggs and the Parmesan; pour half evenly over top. Top with half of the roasted red peppers. Repeat layering with remaining salami, cheese, ham, egg mixture and peppers. Top with remaining package of crescent rolls.

Lightly beat remaining egg and brush over top. Cover dish with foil; bake at 350o for 30 minutes. Uncover and bake 30 more minutes. Cool for 1 hour; cut into 32 squares and serve.



Chicken Crescent Pinwheels

4 oz cream cheese softened 

½ cup chopped cooked chicken 

¼ cup chopped fresh cilantro 

2 to 3 tablespoons finely chopped sliced jalapenos 

2 tablespoons finely chopped green onions 

1/8 teaspoon salt 1 

(8 oz) can Pillsbury Refrigerated Crescent Dinner Rolls 


Heat oven to 375 degrees. In a small bowl, mix all ingredients except dough until well combined; set aside. Unroll dough; separate into 2 long rectangles. Place 1 rectangle on a long cutting board; press perforations to seat. Spread half of cream cheese mixture on dough rectangle to within ½ inch of edges. Starting with one long side, roll up the rectangle; press seam to seal. Cut roll into 16 slices; place slices, cut side down, on an ungreased cookie sheet. Repeat with the remaining dough rectangle. Bake at 375 for 14 to 16 minutes or until light golden brown. Immediately remove from the cookie sheet. Serve warm.  


Fiesta Dip 

1 pkg cream cheese (8oz) 

1 cup shredded cheddar 

½ cup salsa 

2 tbsp chopped bell pepper 

2 tbsp sliced black olives 

2 tbsp chopped green onions 

Spread cream cheese in a square pan (8x8). Sprinkle w/ cheddar. Drizzle salsa, top w/ peppers, black olives and green onions. Microwave on medium 2 – 4 minutes, till the cheese is melted. Let stand and serve with chips.  

Fiesta Corn Dip

16 oz Sour Cream

Packet of Fiesta Ranch 

Mix 

Add can of corn drained 

Add can of rotel

Mix 

Add fresh or bag of cheddar or mexi blend cheese

Chill and serve with Frito Scoops
